Blackberry Sour


  • SodaStream sparkling water
  • Ice
  • 30ml Soda Press Co. Blackcurrant syrup
  • Egg white from one egg or chickpea foam/aquafaba
  • 15ml Lime juice
  • 60ml Gin
  • Dehydrated lime wheel (garnish)
  • 3 blueberries or blackberries, for garnish
  • 2 basil leaves, for garnish

To Prepare the SodaStream sparkling water. Fill a SodaStream 1 Litre bottle to the line with cold water and carbonate. Add ice and some egg white (or chickpea foam/aquafaba for a vegan alternative) to a cocktail shaker and start shaking until frothy. Next, add in Soda Press Co. Blackcurrant soda mix, lime juice and of Gin to the shaker and shake again until combined. Pour the mixture into a tumbler glass and top with sparkling water. Garnish with blueberries or blackberries and basil skewered on a cocktail pick.
